The Glens Falls Region has seen a couple of frosts so far this fall. The last one resulted in a score for me! My fellow Glens Falls Gourmet foodie Jennifer grabbed some beautiful eggplants & flat leaf parsley from her garden and was kind enough to share! I wanted to use them while they were fresh out of her garden. My husband suggested Eggplant Parmesan. That's the only suggestion I needed. We both love it, so off I went. 
Granola is so easy to make and a healthy snack for you to munch on! Granola is a fun to make because you don't really need to follow a recipe. You can channel your inner foodie and throw in whatever you feel would taste good.

Last week I was craving Mexican food. My first thought was to go over to Raul's in downtown Glens Falls after work but decided I wasn't in the mood to hang out in a  restaurant (although it is great there). I opted to make my own enchiladas. I remembered a friend telling me she made them lasagna style rather than rolling each individual one the traditional way. I never did get her recipe, so I decided to wing it and come up with my own. If I do say so myself, It came out really good. I test drove it on my husband and a co-worker and received positive reviews, so I'll share with you. Try it and let me know how it turns out. Elbow macaroni, house blended cheese, smoked bacon, shredded pulled pork all drizzled with smokey house BBQ sauce. Sound delicious? It was! To be honest, I'm not a huge fan of mac and cheese, but my sister Cory ordered it. (She pretty much has to get mac and cheese every time she sees it on a menu.) Anyways, when it came I tried a bite of hers and ended up having half of it! Oh-My-Gosh. To die for. The pulled pork made it so tasty and the cheese and breadcrumbs added the perfect touch. I've never had BBQ sauce on mac and cheese before, but let me tell you it was great! A little pricey, at $16, but I have to say it was worth every penny.
