Chicken Florentine Farfalle with Mushrooms

I would eat Italian food every night if I could. I am always looking for new and delicious ways to add veggies to pasta dishes. I came across this recipe and it was right up my alley and wanted to share it with my fellow foodies! Enjoy ~ Jennifer

Ingredients

3-4 boneless, skinless chicken breasts
1 box of frozen spinach (cooked per instructions on the box)
Mushrooms (I used fresh portabella)
1-2 cloves of garlic
1/2 onion, finely chopped (optional for non onion lovers)
3-5 Tbsp plain cream cheese
Black pepper to taste
Milk (add to reach desired consistency for sauce, approx 1-2 tbsp)
1 jar of your favorite Alfredo sauce
Parmesean cheese (I like the shredded parmesean cheese)

Directions
Cook chicken in a frying pan until completely cooked
Cook pasta according to instructions on the box
In a different frying pan from the chicken add a little olive oil, garlic, onions and mushrooms saute until tender.
Mix the ingredients above all together in a big frying pan (once all are cooked) and added the cream cheese, Alfredo sauce, milk and pepper. Stir well and serve with some parmesean cheese on top!
