still soups

usually this time of year we are only putting out 2 soups each day. soup kinda loses its finesse when the weather gets better. but because we just can't get out from under this cool weather, i am busily hovering over the soup pot.
today's soups were roasted tomato bisque, squash apple bisque (i love to make bisque) and black-eyed pea and ham gumbo with kale. left over soup from last friday are a couple bowls of roasted red pepper. on tuesday i plan to make chicken and white bean soup with green salsa. and then on wednesday or thursday, there will be a sweet potato and crab bisque...(there's that bisque again). last week i went through the orders for cases of frozen squash and was impressed with how much was purchased. we get 48 pounds at a time and we have received 9 cases! my god, that's a lot of squash and it's also many cases of heavy cream! just last week we raised the prices on most of the menu items, including soup. and just today, the coffee company we buy from raised coffee bean prices fifty cents a pound. i also was astounded by the gas prices, up 6 cents over the weekend. when will it ever end....when will it end! we were hesitant to raise our prices, but i guess after 4 years, it was time.

as the former owner of Samantha's Cafe & Catering, carole loves to eat. she grew up on a farm in northern ny, where at a given time of year, there was fresh meat for the freezer. often, on a sunday, a chicken made its way into the "pot". there was unpasteurized milk, cream for homemade ice cream and sulfur water from the well. life was as good as it gets. after college at potsdam, she made her way to glens falls. in 1986, with her husband's help, she started her business named after her daughter the focus was originally on homemade soups, breads from scratch, customer service and having a great time. still, there is the same focus, but now we factor in "green", and local products. good, healthy food can always be found at samantha's. we hope you love to eat, too!
